The company is located in Basilicata (Italy), exactly in Barile,in the province of Potenza in a unique territory on the slopes of Mount Vulture (an extinct volcano), still today uncontaminated, harsh and with cold temperatures in winter and mild in summer. The volcanic soil and the surrounding environment contribute to creating an extra virgin olive oil of the highest quality, since the mill with its olive processing plant has been located for 100 years inside a huge hypogeum built by digging caves in volcanic tuff, whose front, visible on the outside, representing one of the oldest buildings in the Lucanian village. Our company, for 100 years now is strictly a family business in which knowledge is transmitted from generation to generation.

PASSION FOR THIS JOB

Our extra virgin olive oil is produced from olives harvested still by hand and in recent years also with mechanical shakers, selected with painstaking accuracy, deprived of leaves and all impurities, placed in boxes with lateral holes, in order to allow a proper circulation of the ‘air. The predominant cultivar is the Ogliarola del Vulture. The extraction takes place cold (at a temperature below 20 ° C), by centrifugal force, using exclusively mechanical procedures. The milling of the olives is carried out within 24 hours from the conferment, the same are crushed by granite millstones, from which a pulp and stone core is obtained. Once the pasta is obtained, the kneading operation is carried out by which the pasta is processed again, mixing it at a controlled temperature, thus favoring the last phase which is that of the actual extraction.The goodness and simplicity of the extraction method, combined with the particularity of the environmental scenario, allow us to obtain an oil with very low levels of acidity and peroxides.Our oil is slightly fruity and somewhat sweet, with a delicate but at the same time decisive flavor, golden yellow in color with green reflections and therefore suitable for everyone, even for the little ones.
